Jellied Calves Tongue

Calf tongues are pickled for approximately one week and then boiled on the stove top until tender.  They are then added to a mixture of broth, salt, white pepper, and gelatin and allowed to settle in a fibrous casing until they are ready to be sliced from the deli counter for your enjoyment! Approx 1/2 lb packs.
